Celebrate fictional Father Tim
Karon retired at 50 after a long and successful advertising career, intent on writing that first novel. Success was slow in coming, but late one night she awoke with a full blown character in the name of Father Tim, an Episcopal priest who lives in the small fictional town of Mitford, N.C. Since then Karon has published 21 books, landing her on the New York Times bestseller list. Karon’s folksy, homespun novels are grounded in her upbringing in bucolic Lenoir, N.C. Because she is an admitted fan of English novels, the Mitford and Father Tim novels fall into the tradition of James Herriot’s “All Creatures Great and Small.” Father Tim’s easy, calming manner is never preachy, even though questions of theology are essential to his character. In 2004, Karon published “The Mitford Cookbook and Kitchen Reader.” Her excellent website (www.mitfordbooks.com) features readers’ guides to the novels and a chat room for fans. Included are recipes from the series and those shared by readers. Sheila Lukins’ delightful Chicken Marbella is one of the recipes featured there. Combine chicken, garlic, oregano, salt and pepper, vinegar, olive oil, prunes, olives, capers and juice, and bay leaves in a bowl. Marinate, refrigerated, overnight. Preheat oven to 350. Arrange chicken in a single layer in 1 or 2 shallow baking pans and spoon all the marinade over it. Sprinkle with brown sugar and pour white wine around chicken. Bake 50 to 60 minutes, or until chicken is done through, basting frequently. Remove chicken to platter and surround with prunes, olives and capers. Sprinkle with parsley or cilantro. Can be served hot or cold. Buttered parslied potatoes and garlic green beans make great accompaniments. Serves 10 - 12. Source: Silver Palate Cookbook, 1979. Preheat oven to 350 degrees. Grease and flour three 9 inch cake pans. In mixing bowl, combine cake mix, mandarin oranges, mandarin orange juice, eggs and oil. Beat for 2 minutes with electric mixer. Pour into pans and bake for 20 to 25 minutes or until cake tester comes out clean. Cool in pans for 5 minutes, turn out of pans and finish cooling on wire racks.Mitford Books By Jan Karon - News
